I would like to be able to do a search for availability (ideally using FacetWP) so that a user can search for anyone available for e.g. Sept 1 - and have it return which provider is available for that time slot. How can we do this?

This isn't possible with Booked at this time, not without customizations. Unfortunately, we're not handling any customization work at this time. If you get in touch with someone at one of the following custom development shops, they could definitely help you out:
